The sunrise round
A standing order with the farm. Milked at 5, bottled by 6, at your gate before the sun clears the boundary wall.
On the round now — Amritsar, every morning
How it works
The night list closes while the herd is already asleep. Standing orders roll on untouched.
By hand, in the dark, forty-two cows. Every litre is in the chiller by half past.
The van leaves at a quarter past six. Glass on the step before the birds get loud.
Rinse it, leave it out. It goes home to be washed, steamed and filled again.
The plans
Every plan rides the same van, from the same forty-two cows. The only question is how much of the dairy your table wants.

The route
One van, one tight loop, so the milk never waits at a depot. Amritsar first; the map grows a street at a time.

Questions, answered
Any day, by 9 pm. Tell us the dates and the round simply skips your gate from the next morning. Pause a weekend, a wedding month, a whole monsoon — the plan waits, unbilled, until you're back.
Milk tastes of its container, and glass gives nothing and takes nothing. Each bottle is washed, steamed and refilled, and makes the round some two hundred times before it retires. The clink on the step at dawn is part of the bargain.
Indian breeds like the Gir carry the older A2 form of beta-casein, the milk protein, rather than the A1 common in industrial herds. Many households find it sits gentler. The Gir herd is tested as one, all forty-two, so the answer never changes bottle to bottle.
The night list closes at 9 so we know how many litres to milk before we sit down at 5. An order placed at 9:05 simply rides the next round and arrives a dawn later. Your standing plan is never affected.
Monthly, like a good doodhwala. We keep the khata; one bill arrives at the month's end, trimmed for any paused days. No advance, no lock-in — the round earns its place each morning.
